Every country has its local variations in food. The types of food they eat, the way they prepare various foods are quite different from other countries. Bangladesh are not an exception from this. Indeed, Bangladesh are influenced by the regional variations of her history, too.
Main Dishes :
Being an outpost of Mughal Empire once, Bangladesh retain its heritage though its cuisine. Though western food is available in all major restaurants in important cities and towns. Local dishes are normally more exotic. Curries of many kinds abound, cooked with proper spices and hot curry powders including Kurma, Rezala, Bhuna, Masala Gosht, Chicken Afgani, Chicken Baghdadi, Chicken Kashmiri , lots of Kabab, Shuti Kabab, Shami Kabab, Tikia etc. Beside these varieties Biriani, Musallam, Tandoori, Nan, Bakor Khani, Mughlai Paratha, Pillau all are introduced from the Mughal tradition.
Purely local contain Bhat(plain rice), khichuri (hotchpotch), Daal (pulse), a variety of fish and vegetable curries and indian Chappties that are highly recommended to taste.
There are four main forms of rice dishes that someone is likely to encounter are the Biriani (rice with chicken or beef or mutton), Pillau (spicesed like Biriani but without the meat), Khichuri (rice cooked with pulses of any or mixed kind and served with meat), sometimes with pickles, eggs, chicken or beef liver and Bhat which is just plain rice. Sea fish and sweet water fishes are valiable in most of the towns. Fish lovers should not miss smoked or boiled or fried Hilsha (The national fish of Bangladesh). Beside fresh Bhetki (Bay-fish), Chingri (Lobster, King prowns and Shrimpss), are all taste worthy. Among sea fishes Roop Chanda (Pomfret) is very popular, also one can taste Mackerel, Reetha, Pungas (which is also abailable from sweet water) etc. Among sweet-water fishes most common are : Trout, Eel, Butterfish, Ruhi, Katal, Grey-headed feaher back, Climbing fish, Catfish, Walking Fish, Giant snake head, spotted sanke head, various types of Carp etc.
For the vegetarians Bangladesh are a paradise. Plenty of fresh vegetable are available throughout the year. Among common vegetable winter vegetables are more popular because of their different preparations and taste. The common vegetables from Bangladesh are : Cauliflower, Cabbage, Tomato, Potato, Beans, Peas, String Beans, Gourd, Carot, Radish, Pumkin, Okra, Aubergine, or Eggplant, Knoll-kol-turnip, Drumstick, Perbol, Snack-ground, Bitter-ground, Turnip, Arum, Arum-root, Spinach, Basil, Bind-weed, Amarnath and many others. Most of the retaurant serve some kinds of vegetable everyday either fried or curry or even Bharta.
